- В данный момент у нас нет этого товара (or этого предмета, этой вещи) в ассортименте, "Этот товар не включен в наш ассортимент" (sounds very formal, though). If you mean that some items will never be included in your stock, I would use something like "К сожалению, у нас не бывает этого товара (такого товара)".

- I am waiting for a new order to arrive tomorrow.
- Я ожидаю новый заказ, который будет у нас завтра (который будет доставлен к нам завтра, который прибывает к нам завтра).

- I don't know if in this order this item is included.
- Я не знаю, есть ли в этом заказе этот товар (эта вещь, этот предмет).

- I can examine whether this item is available in our other shop.
- Я могу проверить, есть ли этот товар в другом магазине.

- I cannot make a discount because the prices are internationally defined by the supplier.
- Я не могу сделать скидку, потому что поставщик установил [единые] цены по всему миру.

- This is a very famous brand.
- Это очень известный бренд (известная марка).

- If you want we can order this item. We expect it to arrive until Sunday.
- Если Вы хотите, мы можем заказать этот товар (эту вещь, этот предмет). Мы рассчитываем/ожидаем, что он (она, if you said "эта вещь" before) будет у нас не позже воскресенья (до воскресенья).

- This item is very popular and it is sold very quickly.
- Этот товар очень популярен и продается очень быстро. Эта вещь очень популярна и продается очень быстро.

- One minute please and the other saleswoman will assist you.
- Одну минуту (or just минутку), пожалуйста, другой продавец поможет вам. Actually, "saleswoman" means "продавщица", but if you sell luxury items such as rings, watches and so on, it sounds too simple, as if you sell tomatoes etc. So I recommend to use other word for that - "продавец", it's masculine, but you can use it freely even if your shop assistants are women.

- We can adjust the size of this ring. We just need to measure your finger.
- Мы можем подогнать размер этого кольца. Нам всего лишь нужно измерить ваш палец.

P.S. Always remember that you can't use "ты" as an address to the buyers or customers. Some people can interpret it as an insult or an offensive action (although I doubt they will say about that). So, only "Вы" is allowed. If you have a buyer who became your good mate, it's Ok to address him by "ты".

Haha, exactly. Have corrected it. Sometimes I write in English even more than in Russian, so English strongly affects my Russian.

I got a few question regarding grammar & vocabulary though:
Why not -нибудь in a question?
Why not "на данный момент"? Would it indicate "for this moment", whereas в данный момент goes for "right in this moment"?
Could I say "предоставить скидку" rather than "сделать скидку"?

However: if you think that something has interested someone already you say:
- Вы что-то заметили/увидели на витрине, что вас заинтересовало?
if you don't you go with -нибудь

В данный момент/на данный момент - they're the same, both work

Some issues with the word ассортимент Paul.
My teacher told me to say: "У нас большой ассортимент браслетов", which means: We means a big variety (they told me).
So should I conclude that the word ассортимент means: stock and variety?

Ассортимент (assortment) is closer to stock, it's like a list of all your goods. Variety is kinda разнообразие. For example, "у нас большое разнообразие товаров" (sounds a bit awkward, though, coz I translated it literally) = We have a big variety of goods.
Also you can use "выбор", for example: "У нас большой выбор товаров" = We have a large selection of goods. It's very common.
"У нас большой ассортимент браслетов" = "У нас большой выбор браслетов", you can use both.
