    It think like "We are having fun, we'll see where it goes, maybe it'll turn into a long term thing, maybe it won't last".

    It comes from the expression "to take it a day at a time".

    It means they are taking their relationship one day at a time. Ie, they are not planning far into what they are going to do in the future. They are just seeing how it goes, then they might or might not break up. It's got nothing to do with sex.

    Well, there is no set phrase for this kind of relationship in Russian, so the translation will have to be descriptive and it will depend on the context.
    Maybe phrases like "Не гнать лошадей". "Давай поживём и посмотрим, что у нас получится" will work in certain contexts.

    Не "сеймоментная", а "сиюминутная".

    No, I don't agree that "сиюминутная любовь" or "сиюминутные отношения" describes well what our collective brain decided "one-day-at-a-time relationship" is.

    "Cиюминутные отношения" means something like "very short and unimportant relationship".
