Постучать means to give a series of knocks/hits/strikes. (perfective)
В дверь кто-то постучал.

Стучать means to be in process of giving a series of knocks/hits/strikes. (imperfective)
Он стучит молотком.

Cтукнуть means to give one single knock/hit/strike. (perfective)
Капля дождя стукнула по крыше.

Стукать should be an imperfective of стукнуть, but in practice I see no significant differences in meaning from стучать. I think, it is a dialectal and rarely used word. As for me, it means "стучать редко, время от времени", "to knock from time to time, not very often". Here is an example from Google:

В окна дождик гулко стукал.
Капли пели: кап-кап-кап!
Разбудили капли кукол.
