Если вычесть скидку, общая сумма станет 1000 евро. (it's close to your first variant, but sounds not that good)

I would prefer the first two or Alex's version. It depends on the context. If you make calculation in present of a customer, you can use the variants with "я". It will be Ok.

I have one additional question: I want to say to client that "We can design exactly the same ring with rubies instead of diamonds".
How to you say design in this case?

If the expected result of your activity is the drawing (or 3D model, whatever) only you can use "спроектировать", but anyway "сделать" with specification of what exactly to make is better.

Or "изготовить", it means the same as "сделать" in the sense of "to produce", but sounds a bit more official or professional.
