    the only thing that

Я заметил, что не английском я использую этот выражение слишком часто.

    1. The only thing, that puzzles me, is how I will be able to go in Russian.
    2. The only thing, I care of, is the health and prosperty of my children.
    3. The only thing I know for real is that everything are subject to change.
    4. The only thing worth fighting for are dignity and justice.
    5. I know one thing: that I know nothing - Socrates

My question is whether I should use the same structure in Russian:
    1. Единственная вещь, которая задумывает меня ...
    2. Единственная вещь, которая меня интересует - здоровье и благосостояние ...
    3. Единственную вещь я знаю ...
    4. Единственную вещь, для которой заслуживает бороться ...
Чем больше слов, тем меньше они стоят.

You can omit вещь and use just neuter adjective-noun единственное.

    Yep.

    Единственное, что меня интересует...
Единственное, за что нужно бороться etc.

By the way: Единственное, что задумывает меня ...

In this context this verb is correct?

Oh, somehow I overlooked this one. No, this is entirely not correct, up to the point of being nonsense.

Задумывать/задумать is mentally decide to do something or mentally choose something.

Они задумали ограбление - They decided to commit a robbery.
Задумай число от 1 до 10.

What you need here is something like:

    Единственное, что заставляет меня задуматься...
Единственное, что ставит меня в тупик (like a deadend)

iCake now that we mentioned this please help me to translate effectively a similar structure:
    - Sometimes your behavior makes me wonder about your real intentions.

Again the correct translation is: заставлять меня задумываться
Чем больше слов, тем меньше они стоят.

    It's impossible to задумавать somebody.
Puzzles me: занимает меня, озадачивает меня.

    Also:
    для которой заслуживает бороться ...
    should be
    за которую стоит бороться ...

    Better possibilities for 'I know':
    Я знаю одно. (set phrase)
Я знаю только то, что ничего не знаю. (Сократ)

Popular song on 'я знаю одно':
    Пламя «Гороскоп» - текст и слова песни в караоке на karaoke.ru
"Невозможно передать смысл иностранной фразы, не разрушив при этом её первоначальную структуру."

Sometimes your behavior makes me wonder about your real intentions - Иногда твое поведение заставляет меня задуматься, каковы твои истинные намерения.
