If one wanted to say, It is sunny, would you use adjectives or predicative adjectives, and in which gender?

It's sunny.
Это солнечный.
Это солнечно.
Это солнечное.

How would you say these?

If you were talking about a book, saying it is interesting, would you say,

It is interesting.
Эта интересная.
Эта интересна.

Or would you change эта to это?
Or would you even change эта to она?

Someone please help.

No, we usually speak "Сейчас" (now) or "Сегодня"(today) instead of "it's" in such cases:
It's sunny
Сегодня солнечно!

It's funny!
In this case you may say just "Смешно!" or "Это смешно!"(with "это" or nothing)
It's fine!
Отлично! or Прекрасно! or Здорово!
Это прекрасно! or Это здорово!

We say:
Она интересная.
Эта книга интереснАЯ.

If you are talking about story (рассказ)

Этот рассказ интереснЫЙ.
Он интересный.

Knave, I'm sure you're wondering why Russians don't always say Это when there's It's in Englsh? Thumb rule - if you can replace It's with This is or That is then translate It's to "Это". Can you say THIS is sunny? No, I guess? So don't say Это in the russian translation say just "Солнечно" !

exactly. Dont get in the habit of using eto when you dont need to.

that's not correct
as if someone is crazy or underdeveloped to say the whole sentence (Сегодня солнечно)
so i wouldn't recomment using suggested by Garfunkel model (always leaving "it's" without any translation)
the only situation when saying the only word "солнечно" is possible, when you're expressing your pleasure and joy of being warmed by the rays of the sun, so you exhale: "Со-о-олнечно-оо!" ="Благода-а-ать!"="Хорошо-то как!"

I would rather say "Светит солнце".

Ну я же говорил про конкретную ситуацию. Представьте вы выходите с другом (подругой) из дома, и делаете ремарку "Солнечно". Друг отвечает: "Да. Ништяк!". Это вполне допустимый вариант в разговорной речи. Просто отвлекитесь и представьте себе непринужденный разговор не обремененный нормами и правилами грамматики. Так что если иностранец выйдя на улицу скажет "Солнечно" разве это будет неверно?
