In reality the "Полдник" is between lunch and dinner, something about 16:00. It usually consists of a drink (juice, tea, yogurt-"Кефир") and some sweet (cake, bun, fancy cake). This meal is most close to British 5-o'clock tea.

No, I think we use for it verb "перекусить".
We have another word - "закуска", but its usually "attached" to some alkohol drinking.
"перекус" - its like "snack", but its more informal.

In the West of USA amongst farmers and cowboys 'supper' is still always the evening meal and "dinner" is used instead of lunch.

Yes, it is absolutely the same things and purposes.
The word "перекусить" mentioned by Shurick is suitable if used to indicate short fast meal independently of day time.

Opinion is not different from person to person. The opinion differs in time.
The word "Полдник" really originated from "полдень" - "noon" (Ushakov and Dahl time).
But today "полдник" is official word for third meal in kindergarten and summer children campus. Shurick do you have children?
The typical daytime for children is divided in two parts: before day sleeping ("тихий час" or "сон час") and after. Each part includes two meals. Before the day sleeping breakfast and lunch, after the day sleeping "Полдник" and dinner (or supper).

    So, Shurick....

We have as a recap in "general":
Breakfast (when you wake up and break your fast of hunger)
    Lunch (eaten sometime after breakfast)
Brunch (a combination of breakfast and lunch)
Dinner (depending upon where you live is your evening meal eaten after 5:00 pm and in your main meal of the day)
    Supper (same as dinner)
Snack (can be eaten at any time you are hungry)

and of course there is the ever popular Late Night Snack or as one fast food chain in the U.S. is trying to call "fourth meal."
    http://www.tacobell.com/fourthmeal/

In the U.S. it really depends upon where you live how you refer to them (and if you moved away from where you grew up you may still call things as how you learned them so it gets messy).

As DDT pointed out, for farmers and cowboys out west, 'supper' is still always the evening meal and "dinner" is used instead of lunch. But here where I am, we would never say dinner or supper for lunch. Lunch is Lunch here.

    Have we confused you completely?

By the way, I have a favorite quote I would like to share with you that seems appropriate for this thread...
"If I seem unduly clear to you, you must have misunderstood what I said."

At last, I want to specify that in this case "snack" haven't good Russian equivalent, and I suppose we use for it verb "перекусить".
