Though I'm no cheese expert, I would guess it refers to the amount of fat/cream that has been removed from the cheese. In other words, it's telling you that some of the cream has been removed making it less fatty.

in the UK we have milk in skimmed and semi-skimmed varieties.
One day, when I write brilliant Russian I will put some Russian text here. However, I can't promise that it will be in anyway witty.

Please correct my Russian. I implore you fellow human.

So do we. But in russian it literally sounds like "defatted".

Hehe. That's basically what "skim" means. You can also use it as a verb (actually, that's where you usually hear it if you're not talking about молочные продукты). "The mob killed him, because he was skimming money off the top of their gambling outfit."

Вот это да, я так люблю себя. И сегодня я люблю себя, ещё больше чем вчера, а завтра я буду любить себя to ещё больше чем сегодня. Тем что происходит,я вполне доволен!

I lived in USA for several years before I found out what "skim, 1% or 2%" milk was. Until then I just wondered about the "strange" American milk and why sometimes it was milky and sometimes it was creamy!

You mean why sometimes it tasted like milk and other times it tasted like white water?

Yeah exactly!! I could never figure out why sometimes when I bought it that it would be milky blue and tasteless. Hell and I spoke perfect English when I came here. Imagine only speaking Russian and coming here.

What, are you kidding? They'd shrug and just substitute vodka.
