Well, relative and demonstrative have different functions. That is in their definitions. Relative pronouns connect clauses in complex sentences while demonstrative ones are modifiers (определение).

Видишь, сколько ты мне помогаешь. - Here "сколько" connects clauses "Видишь" and "ты мне помогаешь"

Видишь, столько ты мне помогаешь. (More naturally "Видишь, ты мне столько помогаешь.") - Here "столько" modifies verb "помогаешь". You see that you help me so much.

Видишь, столько ты мне помогаешь, что мне не приходится ничего делать. - Here "столько" is not a demonstrative pronoun but a part of complex conjunction "столько, что" which connects clauses "ты мне помогаешь" and "мне не приходится ничего делать."

But I think you mean something different... I guess that "сколько" can be used as a demonstrative. "Сколько звезд!" I think here it is an equivalent of "столько" but the different is in intonation, as maximiv said.
