Творительный (кем? чем?)
Здесь "этим"= "по этим причинам", "благодаря этому", "из-за этого"

Но эти дательный падеж: "по этим причинам", "благодаря этому."

I just listed the phrases you can put into this sentence instead of "этим" to understand it's meaning more clearly. Their case have nothing to do with the case of "этим".

Здесь "этим" - в творительном падеже:
...мы перенеслись в русскую и (чем?) этим (своим свойством/качеством) еще более необыкновенную Калифорнию.

So, этим doesn't modify anything but means something like "по этим причинам" and refers to "в русскую"?

Yes. It refers to 'russianness' of California as to the quality making this state even more extraordinary.

Here's the sense of the sentence:

From Petersburg ... we sped to Russian California, and the fact that it was Russian California made it even stranger.

The этим is instrumental for это.

The participle phrase I left out literally means "which was licked clean by granite fire". I wonder if "granite fire" is the Russian equivalent of "heavy fire, heavy bombardment"?

"вылизанного гранитным огнем" -- это звучит оригинально.

Кстати, в этой фразе, я бы скорее употребил слово тем, а не этим (разница такая же, как между this и that):

Из Петербурга, вылизанного гранитным огнем, мы перенеслись в русскую и тем еще более необыкновенную Калифорнию.

It is a colourful way to say that the city is built of granite, I think.

That is indeed a colorful way to express oneself.

I wonder what a good translation would be for that expression...

From St. Petersburg, with its granit fire licking the skies everywhere
From St. Petersburg, on granit fire throughout the city
From St. Petersburg, covered in granit fires...

But I would also try to say St.Petersburg, polished by granit flame or covered in flaming granit, but I do not know how to collect this and make it sound well.
