    use of plural genitive

    - вам что?
    - шоколадных конфет.

Why not "шоколадные конфеты"? There is no numeral or other qualifier of number. Also in case of genitive he shoud ask "вам чего".

    Accusative!

    "Вам что (надо/надобно/дать)?"
    "(Мне надо/надобно/дайте) шоколадных конфет"

    "вам чего" - vulgar

It is correct to say that in nominative but simple people don't know about that so they're saying шоколадных конфет, колбасы и бананов.

    The quantity is often omitted:
    Дайте мне [сколько-нибудь] шоколадных конфет.

    - Дайте мне колбасы.
    - Сколько?
    - Полкило.

Pople just omit numbers but the rest of the phrase remains.

    "(Мне нужно) Ивана Петровича"

So I conclude that I could use either nominative or genitive in that case.

The answer to your question is because it is "SOME chocolate".

The genitive is used to express the idea of "some", an unspecific quality.

If you used the nominative case it would be definite "Give me THE chocolate".

Chocolate, in Russian as in English does not denote any specific quantity. Thus you say a BAR of chocolate to specify.

Я хочу воду [acc.] - I want the/that water (the water on the table, for example).
Я хочу воды [gen.] - I want some water.

P.s. in the case of Chocolate the genitive plural is used because Chocolate is usually used in the plural.

This is called the genitive partitive. Be careful, some foods and drinks have special forms for this function.

Дайте мне чаю. Чаю is a special form of the genitive singular of Чай (tea) and means "some tea". The normal genitive singular is Чая

    Where is plural?

    Дайте мне шоколад!
    Дайте мне шоколада!

Конфеты is plural because nobody sell the only one piece.

But when I speek at dinner with my wife I can say

Then say so. Шоколад and шоколадные конфеты are different things. Шоколад is just chocolate. It can be either candies or bars or something else. It may even be a hot chocolate.
