A quick question:

how do I say "I would like..."

What about "I want..."

I would like - я бы хотел(a)

I want - я хочу

I want: Я хочу...
I would like: Мне хотелось бы/ мне хочется/ Мне бы...

Thanks! Are the two translations for "I would like" interchangeable, or are there specific situations in which each are used?

Well it depends on emphasis...

I would like (normal) мне хочется
I would like (formal) мне хотелось бы / я бы хотел(а)
I would like (more like I wish) мне бы

How about "I would like something to eat?"

Я хотела чтонибудь поест ?????

Little correction: "Я бы хотела что-нибудь поесть" (without бы you get past tense)
And some other variants:
"Мне бы хотелось что-нибудь поесть"
"Мне бы хотелось чего-нибудь поесть"
"Мне бы что-нибудь поесть"
"Мне бы чего-нибудь поесть"
"Пожрать бы чего" (rude )

Actually, мне хочется is more like "I feel like". I would like is Я бы хотел.

Im pretty sure that New penguin russian...etc book clears up all the Бы questions. Only, i forgot most of it.

Oh, That was quick I hadn't even finished my edit. Yeah I read that That part in N. Penguin. I don't remember it saying which way would sound the most natural though.

Anyways, Yea i honestly don't remember either. I think it depends of context or the situation or the time of day or some other ambiguous crap.

Оба варианта почти одинаковые. Моя интерпретация не очень существенной разницы между ними:
если ты думаешь в первую очередь о своём каком-то желании (хотении), говоришь Я хотел бы,
если же ты хочешь себя выделить, сказать, что именно ты бы этого хотел (остальные бы, может быть, хотели чего-го другого), говоришь Я бы хотел.
