Why not just "Поздравляю"?

"Ничего себе" is just an expression of surprise and can have different emotional connotations in different situations. "Молодец" is used to express your approval, it is more like "Way to go!" than "Congratulations".

If you want to add a little something extra...

От души поздравляю

Зависит от ситуации. "Молодец" подойдёт как похвала с оттенком поздравления (i.e, Well done!).
