"I choose not to be in love with you!" = Я выбрал не быть влюблен в тебя. In this case I think that быть is favourable to чтобы быть. Correct?
I understand that it will be better to write that "I choose not to get in love with you" = "Я выбрал не влюбиться в тебя", but I was curious how it will work with a причастие that requires "to be"

Я выбрал не быть влюбленным в тебя sounds better. Just the full form of the adjective, not the short one.
By the way, Я выбрал не влюбиться в тебя is not correct. When there is a negation, you should use imperfective verbs.
Compare:
Я решил стать врачом. - Я решил не становиться врачом.
Я выбрал пойти погулять. - Я выбрал не ходить гулять. (A bit awkward, both of them. I guess constructions выбрать + verb are not widespread).
Сделай это! - Не делай этого!
