What exactly is the meaning of the following sentence:

Мне украли все документы до единого.

I would have thought that all documents except one had been stolen, but the context where I met this sentence suggests that no document remained with the victim.

It means all documents up to the last one were stolen - not a single document was left.

My guess: "All documents were stolen from me, every one"

All documents were stolen from me, every one - I think that's a good translation.

"Все до единого" — I think the best possible translation is "every single one". This would work in mosts contexts.
