'They could even shoot under their horses' bellies when in full gallop. '
How can one do it? It's difficult to me to imagine it, but maybe i just get something wrong.

I'm guessing it means that the riders could lean over and shoot under the horse at full speed. Otherwise it might mean that marksmen could shoot between their legs as they ran past.

Yeah, what Mage said. It depends on the context. If they are riding, then it's the first one; if they are not on the horse then it's the second. You really have to see some Westerns to get a good idea of it, probably... Either way, this dude's got mad skillz.
