Yes, in Russian texts I have seen Гюнтер and never Гунтер. Гунтер sounds to me incorrect.

is it that big of a deal ? Russians ask me my name and i say either Матт, матфей or матвей. And look, im dogboy.

That's because when you speak with the Russians in your school you don't actually write out your name for them, do you? And I really doubt you say Матт as in "Maht"(as in something about not using мат even for educational purposes - для вас и ваших детей стараемся). But the written form of your name should be as close as possible to the way it's pronounced, and it shouldn't have more than one form.

Don't be so hard on yourself Dog. I've taught and/or been a student at a range of places from no-name to elite Ivy League and let me tell you, there are really smart and really dumb people everywhere. Your experience is what you make of it.
