    Пряности и специи

    Здравствуйте дорогие друзья,

    Не подскажете, какая разница между этими словами? По-английски оба будут "spices".

    Употребляя термин «пряности», надо иметь в виду, что пряности и приправы в узкокулинарном смысле — противоположные термины. Отличие пряностей от приправ заключается, в общем, в том, что пряности не употребляются отдельно и собственно полноценным блюдом не являются (хотя некоторые, например, свежие пряные травы или корнеплоды можно употребить и в отдельности), тогда как приправы в известной степени могут употребляться отдельно, хотя и не все. Пряности, в отличие от приправ, лишь оттеняют общий вкус блюда, вносят новые нюансы, тогда как приправы сами по себе являются составляющей блюда в целом, создают его вкус. Некоторые пряности (в основном корнеплоды) можно использовать и как приправы, например, корень сельдерея — высушенный корень используется в виде пряности при приготовление супа, он же в сыром или термически обработанном виде как ингредиент салата или основа для супа-пюре. Также следует отметить, что слово специи также, по крайней мере, в русском языке, не является синонимом слова пряности: специями в кулинарной практике и быту называют некий набор наиболее распространённых и употребляемых пряностей (перец, лавровый лист и т. п.) и приправ (соль, сахар, горчица и т. п.). Не следует путать пряности с ароматическими веществами типа иланг-иланга, лепестков розы и т. п., применяемыми только для ароматизации блюда или подцвечивания, но не для придания вкуса.

    Специи - generic term for all 'spices'.
    Пряность - все специи, которые имеют пряный (острый) вкус, запах.

    фр. épices - специи - происхождение одно и то же, корень латинский, как и в англ. spices

    пряный - фр. épicé, piquant (пряный запах — senteur épicée).

    Отличие в том, что слово "пряность" - чисто русское. Восходит к древнерусской форме, обозначавшей "перец".
    "Специи" - латинизированная форма.

    There's also the word заправка -- as far as I know, this includes not only "spices," but also things like соль, сахар, уксус, вустерский соус, т.д. (salt, sugar, vinegar, Worcestershire sauce, etc.). Although sugar wouldn't be a "заправка" when it's a major ingredient, as in cakes and cookies -- only when it's added in small amounts to "correct" the flavor of a marinade, for example.

    P.S. But заправка also has other important meanings that are totally different -- it can mean "the act of (re)fueling an automobile, airplane, rocket engine, etc.", and concretely it can also mean "a gas station."

    Throbert, I think what you are talking about is "приправа". Заправка is a part of a dish cooked separately from the main dish but then at some stage added to the main dish. Like "заправка для борща", which is basically beet cut into long thin stripes, with spices fried slightly, etc, which adds the red color to the soup.

    "Заправка" as gas station and process of filling a vehicle (aircraft, etc.) is par for the course. Mostly used when referring to gas station.
    But "заправка" for salad is rare. More often you will hear the verb "заправлять" (and it's usually salad or kasha-style). Заправить майонезом, заправить маслом, заправить сметаной; хотя бывает и "заправить кашу маслом" (add butter to kasha). Notice these are not spices, заправлять oftens means adding something like smetana, garlic, mayo, or complex souce.

    Sure, that's exactly what it means. It is irrelevant to "spices, пряности" meaning.
