Знания ты приобретаешь в школе, университете. Знание физики, математики и других предметов.
Познание - это высокий слог. Познание жизни приходит с годами. "Познание себя - путь к счастью!".

It is a bit tricky. In fact знание - знания and познание - познания are four different words rather than just single-plural of the same.

знание
1) знание чего-либо. knowing of something concrete, of the given fact or the given subject. (direct meaning)
2) знание вообще. general knowledge of humanity. "Научное знание зашло в тупик."

знания, познания - erudition. Almost the same.

познание - a process of gaining knowledge (often it means gaining metaphysical knowledge: that's what Lampada wrote about)

I'm not a master in russian but the difference between the words is clear for me (depends on context though).
I agree with the others but have something to add:

Знания (познания) - something that you have already got - knowledges (знание; познание (more rarely) singular - knowledge).

Познание - this is a process of getting knowledges (learning, comprehension, often used in philosophy). The verb is познать, познавать (cognize, perceive are the most suitable words in English in my opinion). Like gerunds in English - познавать or познать - познание (process). Познавать мир (себя, etc.) - познание мира.
