I'm trying to understand the following:

На оныя употреблены гродетуръ черный и бѣлый и селадоновый моръ.

Is the white cloth gros de Tours? is it moire? or is it completely ambiguous?

It's definitely ambiguous.
But I bet 'black and white' was said about 'gros de Tours'. Black or white moire is a little bit strange thing. Main feature of moire is color gradient, so (though it's not 100%) I bet "light-green" is only color of "moire" mentioned here.
