    What is the difference between “больше всего” and “большинство” in these? Why does больше всего sound better?

    В ночном клубе было очень шумно, и казалось, что больше всего шума исходило от одного стола.

    В ночном клубе было очень шумно, и казалось, что большинство шума исходило от одного стола.

    Я бы сказал
    В ночном клубе было очень шумно, но казалось, что весь шум исходит от одного/одного-единственного стола.

    I'd say that "большинство" doesn't like uncountable nouns very much. It's not a strict rule though.

    Yes, uncountable nouns can't stand "большинство".

    At the nightclub it was extremely noisy, and it seemed more often than not, the noise came from one table. vs. At the nightclub it was extremely noisy, and it seemed that the majority of the noise came from one table. The correct Russian variant sounds better in English, too.

    I would say "больше всего шума". And I wouldn't say "большая часть шума".
    In Russian, all nationalities and their corresponding languages start with a lower-case letter.

    "Больше всего шума" - хорошо в тексте такого рода. Мне нравится .
