For example, if I were to say: вижу мои друзья wouldn't I be grammatically incorrect? Because I'm pretty sure друг is an animate noun. so if I were to use the accusative case on друзья would it change or stay the same?

Yes, it is animate and changes accordingly. "Вижу моих друзей." = "I see my friends."

If you change case, you change sense: "вижу, мои друзья..." means "I see, that my friends..."

It should be "я вижу моих друзей". The accusative case plural is identical to the genitive case plural for animate nouns, not to the nominative plural.
