a chin up is when you grab a metal bar and pull yourself up to your chin

а как же назвать тот предмет (metal bar)

the only word I can think of is трость - but that's a walking stick, so I don't think that's right. Or maybe прут?

Перекладина. The whole construction is called Турник. Две стойки и перекладина.
The process is called "подтягиваться" or "подтягивание" (на турнике).
