What is the difference?
100% identical for me.

съесть - to eat up (a whole apple or w/e)
поесть - to eat a bit/some amount

There are way more differences than these two above. In other words, there are differences.

At the moment I am satisfied with these. I don't think I will be able to memorize more uses.
So
1. Я поел один бутерброд - I haven't finished it. I just bit some pieces of the sandiwch
2. Я съел один бутерброд - I ate it all!

поесть = to have a meal
съесть = to eat something up

So "Я поел бутерброд" is incorrect.

съесть + type of food
поесть + nothing

You can say: "поесть в ресторане", but "съесть кусочек котлеты".

You can say "Я поел бутербродов" but unlikely "Я поел бутерброд" (though it becomes more likely if бутерброд is VERY big). Бутерброды here treated as uncountable.

I'd say that "поесть" means "to spend some time eating".

Съесть - этот глагол указывает на завершённость действия.
