    Цыплят по осени считают - Wait till you get some real results and then talk about it (count chickens - means that no matter how many chickens were born during the year, only those which made it till Autumn will count)

    Любишь кататься - люби и саночки возить - as Kalinka_vinnie has said - you'd better like the sweating involved if you like to get some pleasure out of something.

    Literally: One counts chicks in the autumn. The closest English analogue is IMHO "Don't count the chickens before they hatch."

    По осени (colloquial) = осенью (as a season in general), в осеннее время. We also say "по весне", but we don't say "по лету", "по зиме".
    Налево пойдёшь - коня потеряешь, направо пойдёшь - сам голову сложишь.
