"Вот так люди и исчезают!" I thought I understood this sentence, but I guess I don't. I'm having problems with the "и ", amongst other things. As I understand it the guy is either saying (he's extremly upset): "That's why people disappear!" or something like: "Look at them. They just walk away!" Anyone?

From your explanation it is hard to understant how exactly people disappear.
"Вот так люди и исчезают!" might mean"That is how people disappear/ vanish!" Maybe they (people) have not walked away but have been eaten by an alien, or arrested quietly, or anything else entirely different.
Where did this expression come from? Where there other sentences around (before and after), a description of circumstances, any clues, perhaps?

I'm having problems with the "и "

If a next word is a verb, and sentence has the word «так», «и» can be not equal «and». In this case it means «именно». More precisely put, the word «именно» has to situate before «так», but we skip it and use «и» to put emphasis on a verb.

So, your sentence means «Именно так люди пропадают» («Люди пропадают именно так»). The meaning of the word «пропадать» depends on a context.

Examples:
1) «[Что-то] случилось именно так» = «Так и случилось»;
2) «Я сказал именно так» = «Я так и сказал»/«Так я и сказал»;

Examples without «так»:
1) «Именно об этом я подумал» = «Об этом я и подумал» = «Так я и подумал»;
