But in my opinion the proper version would be "она всего лишь имитирует отсутствие интереса" or "играет в отсутствие интереса". I guess this translation corresponds to the English phrase more than others.

correct variant: Мы всегда флиртуем (кокетничаем). You used the reflexive verbs, but -ся is not needed, because you can't flirt with yourself (although maybe English allows it, I dunno ).
