Firstly Спасибо, but I thought one was один and Раз was once? Why would she say once, two, three, four?

No, here it means "один," it's a special word for counting. In this meaning "раз" is indeclinable. Germans also have something like this: for "one" in "one, two, three, ..." they use "eins," not "ein" or something. :-)
I would recommend you to use dictionaries. It's the first meaning of the word "раз," you could easily find it yourself.

Ok, in this dictionary the first one, in Ozhegov's it's the third meaning and here it's the second one. Anyway. )

Again Спасибо. That makes more sense. I did try to use a dictionary but my Russian is very very beginner and I was having trouble understanding the definitions.
