I know, it sounds silly to water a Christmas tree... but water does give a few more days of "life" to the dying tree.
For the same reason you will put cut flowers in a vase with water... a few more days of "life".
The trees, and flowers, will continue to absorb water, after cutting. But only for a few days.
I use to grow roses, many years ago, and take rose stem cuttings, replant, and grow new, fresh roses with the cuttings. Many of the botanical principles are the same.
The science of "hydroponics" gardening also uses similar principles for growing plants, vegetables.
