Do they use latin letter or Russian ones?

Mathematical symbols are universal for the most part.

In books it is published with the tradition Latin variables (x,y,z).

But really any symbol can be used. That's why they call it a variable.

Latin letters are used and overused. People who don't know English or just careless often spell English words naming them like Latin. This is really annoying.

I don't know why Russian letters aren't used at all in algebra in the west - we use Greek letters all the time. If I become a world-famous scientist, I'll make a point of using цгшщъылджэячиьбю in addition to all the Latin and Greek letters we use.

Also with musical notes, I understand that in English we say EGBDFACE, but in russian they say do re mi so fa.... yes?

Practically, yes. But don't you aslo have do, re mi, etc.?

Algebraic notation is universal one, including use of latin letters, greek letters (to denote angles, for example) and even some hebrew ones.
