As we say in America: win of you - lose of you
I've seen a film about the making of "The Perfume" movie, and there is an episode, a working moment of a shoot, where Dustin Hoffman says "As we say in America: win of you - lose of you". After these words everyone laugh. What do they mean? Is it a proverb?
P.S. I was trying to say "рабочий момент съемок" in English, and I'm not sure that "working moment" is ok... Is there some common expression for "рабочий момент" in English?
P.P.S. Please correct my other mistakes!

*documentary is closer.
**Not sure what you meant by episode here.
To answer the question - I've never heard the phrase before. I have heard "You win some, you lose some" which makes sense.
P.S. The movie is called "Perfume: The Story of a Murderer," which is why you don't say "The Perfume."

Yes, I knew that, by I thought one might call it just "Perfume". Or was I wrong just because I used "the"? In Russian, the full name of the movie is "Парфюмер: история одного убийцы", but we can call it just briefly "Парфюмер".
Here's this moment:

Have I misheard it?

A shoot is the entire thing...a movie shoot. A shot is just one piece of a shoot. For example, each camera angle is a different shot.
I still think I meant "shoot"... Well, in Russian it's рабочий момент съёмок. And съёмки is an entire thing...
