Nope, that doesnt work here. I'd say it is

"Такие бизнесмены мне на один зуб"

Or you can say it the same way you have it in your example

"Таких бизнесменов я ем на завтрак"
"Такими бизнесменами я на завтрак закусываю"

I think we don't use the expression "щелкать как семечки" when we talk about people not to confuse it with the word "раскусить" which means something different.
