я хотела бы стать музыкантом

- when making a statement like this, is "стать" ALWAYS followed by the instrumental case?

for instance, if you were trying to be poetic and wanted to say something like....

"i would like to become the sky" would it be... "я хотела бы стать небом"

(haha... ok... so maybe that is not so poetic... but im basically wondering if nouns following стать only take the instrumental when speaking about careers.... and if there are any situations when it would take the accusitive case...)

Yes, always instrumental in this case (to become someone/something).
Not career-related examples:
К концу рабочей недели люди становятся усталыми.
Иногда я становлюсь раздражительным.
Теплое пиво становится невкусным.
