I've been told that поговорить means "to have a talk", like a whole conversation, and I think разговорить means "to interrupt". I could be wrong. I'm pretty sure раз means in between so it's like to speak between.

Разговорить - это создать условия, настроение и обстановку, чтобы молчаливый человек начал охотно участвовать в разговоре.

Сначала он только слушал, потом начал делать короткие замечания, но под конец встречи разговорился, и тогда мы узнали его получше.

поговорить - have a talk, just talk.

разговорить (перех.) кого-либо - means to make someone talk by controlling the talk, make your interlocutor feel comfortable and relaxed, willing to speak and share ideas with you.

I'm pretty sure раз means in between
Here раз- means "up" or "out" I guess. I'd appreciate if you suggest a word that better of all reflects the concept:
    Here's the situation:
Somebody is being interrogated by a detective but the suspect refuses to reveal his secrets.
So the detective resorts to various tricks and things to "разговорить" the suspect so that he would let out his secrets.
So basically "разговорить" means "to make somebody more talkative".
Another month ends. All targets met. All systems working. All customers satisfied. All staff eagerly enthusiastic. All pigs fed and ready to fly.

    Here's the situation:
Somebody is being interrogated by a detective but the suspect refuses to reveal anything he has in his mind. He's "locked" and needs "unlocking".
So the detective resorts to various tricks and things to "разговорить" the suspect so that he would let out his secrets.
So basically "разговорить" means "to make somebody more talkative".

P.S. I guess impulse meant "говорить" vs "разговаривать", not sure tho. Разговорить is too proficient a word for a learner.

Medved (Е), that's the right direction.

There is also another specific meaning. And the Eng. verb 'chat up' is used for it.

Chat up – To chat someone up is to try and pick them up. If you spotted a scrummy girly in a bar you might try to chat her up. Or a girl might try and chat up a chap!

So sometimes разговорить may be used for such a situation. I am not sure this is the exact equivalent, but it makes sense to compare разговорить and 'chat up'.

Поговорить - to talk (about smth in a form of monologue or to have a conversation with somebody)

Разговорить - to get someone to talk (who initially doesn`t want due to boredom\ secrecy \ shyness etc)

Can often be found in detective novels.
An excerpt from one article about Reymond Chandler`s charecter:

Марлоу обладает, конечно, некоторыми особыми качествами — и в первую очередь умением расположить к себе людей, разговорить их, дабы выудить необходимую информацию.

n.b. "РАЗ" is a russian prefix which normally refers to verbs like "starting action, beginning of the process": разболтать, раздербанить, раздолбать, разделаться...

    ... also болтать and беседовать.
What is there difference from the two verbs mentioned by impulse.
Чем больше слов, тем меньше они стоят.

Болтать, болтовня (если о разговоре) скажут, когда разговор идёт о чём-то незначительном, ни о чём. Пустой разговор. Болтать - время терять.
Беседовать, беседа - это разговор о чём-то интересном, серьёзном, важном.
