Я дошел до метро "Чкаловская", встретив по дороге всего человек пять.

Why? Я встречаю кого-то! So ... встретив по дороге всего пять людей ...

He doesn't mean that he met exactly 5 people, he means that he met approximately 5 people on his way to the metro station.

That's a common inversive construction in Russian:

Дай мне 5 штук - Give me exactly 5 items of this
Дай мне штук 5 - Give me about 5 items of this.

As for встречать кого-то...

I don't see why it's giving you any trouble here, it is still applicable to that sitution.

встречать (кого/что?) пять (кого/чего?) человек.

Hmm, maybe you I do see what's put you off track there.

Встречать человек is damn wrong, as is встречать человеков, which would be a right conjugation here. However, встречать людей is perfectly fine.

But встречать isn't connected directly to человек there, it's connected to пять. Человек in turn is directly connected to пять.

Пять людей... I don't know. It doesn't sound wrong outright, but it is still off. We usually use an appopriate conjugation of человек with numbers.

22 человека, 6 человек etc...
