Thread: russian steak

i was in perekrostok the other day and couldnt find anything that looked like steak as i know it there's plenty of red meat there but i expect i need to specify the exact cut i want. so i guess if i was just looking for rump i would shoot for вырезки right?

Be careful what you ask for. Meat cuts at the supermarket are not the same as American. Asking for things like "chicken breasts" will get a lot of laughs .
The only American style steak in Russia is at an expensive restaurant or maybe can be found at Stockman's. But in 5 years I have never found any beef in Russia that is good for anything other than soup or ground up and mixed with lots of spices. When you order "beefsteak" at a cafe you will probably get a chunk of veal with some sort of sauce or topping. The veal though is very good in Russia and far superior to the Old Cow that is sold as beef.

balls.... so what should i be buying as my primary red meat source? chicken breasts (i buy the fillets in packs, they're fine) and tuna i dont have a problem with but there is only so many moskovskie kotleti a guy can eat!!

I usually boneless skinless chicken breasts in the supermarkets. They're not always available though....same for mushrooms. I bought everything for pasta last night but could not find any mushrooms OR parmesan cheese. So I didn't bother to make it yet. The black olives suck here too! They seem only half pickled or whatever they do to olives to make the edible.

I work as a butcher when i'm not at the university... what would be the equivalent to flank steak(the steak used to make teriaki), t-bone steak, cross-rib roast, ox-tails(god I love them), and what about lamb-chops??

Sorry, no roasts, steaks or t-bones. Oxtails are just labeled as meat for soup along with any other kind of bone with little or no meat on it. The red meat carnivore culture just doesn't exist in Russia like in America or Argentina. Beef is usually tastless, expensive and comes in variously sized chunks. Pork and chicken here are far fresher and tastier than the American equivalent and a lot more affordable. Beef dishes that aren't ground up or boiled to death are usually made with veal. And yes lamb chops can be purchased in the American style styro -plate- shrink-wrapped package of 3 or 4 peices, but they may be labeled "escalope".

DDT, do you have Pitorichka in St. Pete? I always get chunks of fresh parmesian there and shred it myself. The dry canned stuff can be found at big gypermarkets like Ashan and Carousel. And the olives are usually from Spain. It took me a while to get used to the different flavor ( I love California style olives) but there are some brands that are actually good. So keep trying till you find one you like.

I'm sorry, that's criminal. The Russian "kids" at my motel don't make much money. I'll get them all a "Surf and Turf". I gave them a clambake; swordfish/ Prime Rib now. I've had kids cry....

I don't expect seafood, but a steak is .... Gods gift...

I dont know what Pitorchka is. I used to be able to get nice chunks of parmesan when I lived closer to the center but I have since moved several Metro stops bit south of Centre and shopping for some things is a bit suckier, like for Pamesan.
Oh, and incidentally, they shut the hot water off the other day, for a month so I've been told. I was lucky where I lived before because we had out own hot water tank, but not here unfortunately. Sucks for shaving and for washing dishes too.
