    Favorite Russian Cuisine

    My favorite Russian food is Hachapouri (sp?) -- but I think it was originally a Georgian dish. Please let me know what your favorite is (and if possible, the recipe).

    Sorry, but mine's borsch...my ex-wife made the best, next to Pushkin's in Moscow, but alas I don't have her recipe. She and her mother would add a few things to spice it up.

    My mom makes astonishing fish meals...halibut,horse-mackerel,perch etc. she makes cutlets out of fish sized as pelmeni or a bit bigger...they are so airy!!!...just dip it into the garlic sauce and fly...I also like differents kinds of caviar made of marrow,aubergine etc. I'm not sure if I can use a word caviar here...but in Russia we call it икра also...adgika(аджика) is fabulous too...but it's Caucasian

    My Persian and Turkish friends would all say that "kebabs" are Middle Eastern (Persia/Turkey/etc.). The only really good traditional "kebabs" I've had were from Persian restaurants, and in the homes of Persian friends.

    BUT...I'm figuring that Vending Machine is speaking of шашлык,which is Russian barbecue, and definitely not Persian/Turkish. And they are fantastic, with a good cook and good sauce!

    The best kebabs are the ones made in my native Norway... Mmmm... I think the owners are Turkish, but when I went to Istanbul they had completely different kebabs... I believe every country has their own kebab-tastes.

    Alright, don't get yourself in a twist!

    I figured you were referring to шашлык, since this is a Russian cuisine thread, not a 'favorite foods' thread.

    For what it's worth, we have 'kebab' restaurants all over Madrid, but they are basically grilled lamb, or chicken, skewers, or gyros (similar to Greek). They are generally considered Persian cuisine, although I've had the real thing, home-cooked by Iranian, and Turkish friends, and those kebabs are very different.
